Ingredients required: Red rice, chopped veggies of your choice, beetroot puree, onion, ginger, cashew nuts, ghee and greem chilli.

Spices required: Biryani masala, turmeric, chilli powder, bay leaf. cinnamon stick, green and black cardamom, oil  and salt.

Procedure: First, soak some red rice in water.

Take some water in handi and add spices such as cinnamon stick, bay leaf, green and black cardamom, salt and oil.

Add soaked red rice in the handi and cook till it is semi-cooked.

Now, take veggies of your choice such as cauliflower, carrot, potato, peas and marinate them in curd, ginger garlic paste, salt, lemon juice, chilli powder, and other spices.

Now, take the oil in a pan and add slices onions, green chillies and marinated veggies and cook them for 7-8 minutes.

Add the spices of your choice and mix well. Let it cook for 10-15 minutes and then add ghee.

Then, add some ghee to the pan and add a layer of semi-cooked red rice.

After that, add a layer of cooked veggies and sprinkle some saffron water. Repeat this step twice.

Cover the lid of the pan and let it cook for 30 minutes.

Serve hot with raita or salan.
