The Google Doodle for today honours pani puri, one of India’s favourite street foods. Pani puri needs no introduction to Indians. A crispy shell filled with potatoes, chickpeas, spices, or chiles forms this street snack, which is also served with flavoured drinks. A restaurant in Indore, Madhya Pradesh, set a world record for delivering the most flavours of pani puri on this day in 2015 by providing 51 variations.<\/p>\n\n\n\n

There are numerous regional varieties of this street food throughout India, giving rise to its many various names. The bite-sized street meal known as pani puri is popular in Maharashtra and Andhra Pradesh. It is typically packed with boiling chickpeas, a white pea combination, and sprouts and dipped in tangy and hot pani.<\/p>\n\n\n\n

The potato and chickpea-filled snack is known as gol gappe or gol gappa in the northern Indian states of Punjab, Jammu and Kashmir, and New Delhi and is served with water flavoured with jaljeera.<\/p>\n\n\n\n

In West Bengal and portions of Bihar and Jharkhand, it is known as puchkas or fuchkas, and the primary ingredient is tamarind pulp.<\/p>\n\n\n\n

Pani Puri is said to have been made for the first time by Draupadi during the Mahabharata era. According to legend, the warriors were still in exile and had few resources when Draupadi became the Pandavas’ wife. Kunti, Draupadi’s mother-in-law, instructed her to prepare food that would satisfy the appetites of the five men using some leftover aloo sabzi and wheat bread. Draupadi prepared a bite-sized pani puri as a result, which helped the Pandavas satisfy their hunger.<\/p>\n\n\n\n
